  • Beef tenderloin rolled in Parma ham with duxelle mushrooms, baked in puff pastry. Served with red wine sauce.

Pickup

  • Your New Year's food must be collected on the selected date between 10-15 at Feed Bistro, Vesterbrogade 1p, 1620 Copenhagen V.

Preparation

  • Shopping: Egg yolks + meat thermometer
  • 1) Take the Wellington out of the refrigerator 30 minutes before baking so that it comes to room temperature.
  • 2) Turn on the oven to 225 degrees hot air
  • 3) Unwrap the Wellington from the film and place it on a piece of baking paper on a baking tray.
  • 4) Beat egg yolks and brush the Wellington. Then you can scratch a pattern with a fork and decorate with sea salt, thyme or similar.
  • 5) Bake the Wellington to a core temperature of 30 degrees (about 20-25 minutes). Take a little extra time to make sure you hit the core temperature in the middle of the meat.
  • 6) Let the Wellington rest until the core temperature reaches 50 degrees. 
  • 7) Cut with a sharp knife or bread knife. Serve!
